EVERY Sunday we have grilled salmon. It's my job to prepare the sides. Tonight I made charred brussel sprouts (done in cast iron pan) and smashed red potatoes w/ green onions. Chardonnay goes well wth this meal.

Well... I started the pork roast a bit later than I wanted... then a bit later my dh unplugged the CP in order to plug in the microwave (we are off grid, and have to be careful how much wattage we use at one time), then he forgot to plug the cp back in . I found out a good half hour or so later, and needless to say... the pork was not finished in time for dinner, so I made burgers instead.

GG, I made that One Pot Lasagna Soup..Oh my, is it ever delicious!  It's a hit with Fred.  He said I should make it again.  I made it in the Instant Pot, 4 hours on slow cook after I browned the meat and onions.  Plenty left for tonight with a loaf of crusty bread and a salad.  I'm hungry!  Thanks for posting the link for that delicious soup.  I'm thinking that would be good at the TN Retreat.  I'll make it one night.

I tossed in some pepperoni too.   It's what I'm making for dinner tonight.  MIL lands at dinner time so this is something I can keep warm until we get her picked up.   :D
